Instructions
In a medium mixing bowl, combine the all-purpose flour, almond flour, baking powder, and salt. Whisk together until well blended, then set this mixture aside.
In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar. Beat the mixture on medium speed until it becomes light and fluffy, which should take about 3-5 minutes.
To the creamed mixture, add the egg, almond extract, orange zest, lemon zest, fresh orange juice, and lemon juice. Mix everything together until completely integrated.
Gradually fold the reserved flour mixture into the wet ingredients. Stir gently until a cohesive dough forms. Note that the dough might be slightly sticky; this is normal!
Divide the dough into two equal halves. Wrap each portion in plastic wrap and place them in the refrigerator. Let the dough chill for at least 1 hour. For the best flavors and texture, consider refrigerating overnight.
When you're ready to bake, preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper to prevent sticking.
After chilling, take one portion of the dough and roll it out on a lightly floured surface to about 1/4 inch thick. Use cookie cutters to cut out fun shapes.
For each cookie, take two pieces of cut dough and gently twist them together to create a beautiful spiral design. Place the twisted cookies on the prepared baking sheets, ensuring they have some space between them.
Place the cookies in the preheated oven and bake for 10-12 minutes, or until the edges turn a light golden brown. Once baked, remove them from the oven and let them cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
In a small bowl, whisk together the powdered sugar and milk until you achieve a smooth and drizzle-able icing. Once the cookies are fully cooled, drizzle the icing over them and sprinkle with edible glitter or festive sprinkles if you like.
