In a medium mixing bowl, combine the rolled oats, cocoa powder, and a pinch of sea salt. Stir thoroughly to evenly distribute all dry ingredients.
In a separate mixing bowl, whisk together the almond milk, peanut butter, maple syrup, and vanilla extract. Blend until the mixture is smooth and well combined.
Pour the wet mixture over the dry oats. Stir well until all of the oats are completely coated with the chocolatey liquid.
Carefully divide the oat mixture evenly into two jars or airtight containers.
Seal the jars with their lids and refrigerate overnight, or for a minimum of 4 hours.
When you are ready to enjoy, remove the jars from the fridge and give the oats a good stir. Top each serving with slices of banana and a sprinkle of chopped nuts or granola.
Notes
Serve in clear glass jars for a beautiful presentation. Drizzle with peanut butter and garnish with cacao nibs for extra flavor.
