Begin by preheating your waffle iron according to the manufacturer's guidelines so it's ready for the batter.
In a medium mixing bowl, combine the all-purpose flour, baking powder, salt, 1 teaspoon of cinnamon, and 2 tablespoons of granulated sugar. Whisk together until fully blended.
In another bowl, whisk together the egg, whole milk, melted butter (make sure it's cooled, so it doesn't cook the egg), and vanilla extract until you achieve a smooth, homogenous mixture.
Carefully pour the wet mixture into the bowl with the dry ingredients. Gently stir until just combined, taking care not to overmix; a few small lumps are perfectly fine.
Lightly coat the waffle iron plates with non-stick cooking spray or a smear of butter to prevent sticking. Pour enough batter onto the waffle iron to cover the entire surface (about 1/2 to 3/4 cup, depending on the size of your iron).
Close the waffle iron and cook according to manufacturer's instructions, typically around 4-5 minutes, or until the waffles are beautifully golden brown.
While the waffles are cooking, prepare the cinnamon sugar by mixing together 1/2 cup of granulated sugar and 2 teaspoons of ground cinnamon in a shallow dish.
As soon as the waffles are done, promptly remove them from the waffle iron and immediately dip each side into the cinnamon sugar mixture, ensuring they are well coated.
