Instructions
Begin by preheating your air fryer to 400°F (200°C).
In a shallow dish, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and black pepper.
In a separate bowl, beat the egg until frothy.
Dip each chicken breast into the beaten egg, then transfer to the breadcrumb mixture, pressing down to coat both sides thoroughly.
Lightly spray or brush the air fryer basket with cooking oil, then place the coated chicken breasts in a single layer.
Air fry the chicken at 400°F (200°C) for 10 minutes.
Carefully flip the chicken breasts over and continue air frying for an additional 5 minutes, or until the internal temperature reaches 165°F.
Remove the chicken from the air fryer and spoon marinara sauce over each piece, then sprinkle with shredded mozzarella cheese.
Return the chicken to the air fryer for an extra 2 to 3 minutes, or until the mozzarella is melted and bubbling.
Let the chicken rest for a couple of minutes and garnish with fresh basil leaves before serving.
Notes
Serve on a bed of fresh arugula or alongside a light salad for a lovely contrast.
