In a medium-sized mixing bowl, combine the honey, Sriracha sauce, soy sauce, rice vinegar, minced garlic, grated ginger, and sesame oil. Whisk the ingredients together until the mixture is smooth and well blended. Season with salt and pepper to your liking.
Place the chicken breast cubes into a large resealable plastic bag or shallow dish. Pour the prepared marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour—marinating overnight will enhance the flavor further.
Preheat your grill or grill pan to medium-high heat. This step ensures a nice sear on the chicken skewers.
Carefully thread the marinated chicken cubes onto the skewers, leaving a small space between each piece to allow for even cooking.
When the grill is hot, add the skewers and grill them for approximately 4-5 minutes on each side. Cook until the chicken pieces are fully cooked through and display appealing grill marks.
Once cooked, remove the skewers from the grill and allow them to rest for a few minutes to retain juices.
Drizzle any remaining marinade over the skewers for an added flavor boost, then sprinkle with freshly chopped cilantro as a bright garnish before serving.
