1teaspoonfreshly grated ginger
1red bell pepperdiced
0.5cupfresh cilantro, chopped

Instructions
Prepare the Marinade: In a medium mixing bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, minced garlic, and grated ginger. Continue whisking until the brown sugar is fully dissolved, creating a flavorful marinade.
Marinate the Chicken: Add the cubed chicken pieces into the bowl with the marinade. Gently toss to ensure every piece is thoroughly coated. Allow the chicken to marinate for 10 minutes to absorb the rich flavors.
Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Once the oil is shimmering, carefully add the marinated chicken along with all the marinade. Spread the chicken cubes evenly across the surface of the pan.
Cook the Chicken: Sauté the chicken for 6-8 minutes, stirring occasionally, until it turns golden brown and is fully cooked through. Taste and season with salt and pepper as desired.
Add the Bell Pepper: Incorporate the diced red bell pepper into the skillet and continue to cook for an additional 2-3 minutes, allowing the pepper to soften slightly while still retaining a bit of crunch.
Finish the Dish: Remove the skillet from heat and sprinkle the chopped cilantro over the chicken bites. Toss gently to combine everything, allowing the cilantro to infuse its freshness.
Serve: Serve the Thai Chicken Bites warm, optionally garnished with sliced red chili or crushed peanuts for an extra touch of heat and texture.
Notes
