Instructions
In a medium mixing bowl, beat together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
Pour in the vanilla extract and sprinkle in the salt. Blend well on low speed until combined.
Gradually sift in the all-purpose flour while mixing. Continue to stir until a crumbly dough forms, ensuring no visible flour pockets remain.
Gently fold in the crushed Oreo cookies and mini chocolate chips using a spatula for even distribution.
Wrap the dough tightly in plastic wrap or place it in an airtight container. Chill in the refrigerator for about 30 minutes, or until firm enough to handle.
Once chilled, use a small cookie scoop or your hands to divide the dough into small balls, roughly 1 inch in diameter, and place them on a lined baking sheet.
In a microwave-safe bowl, heat the white chocolate in 20-second intervals, stirring gently until fully melted and smooth.
Using a fork, dip each cookie dough ball into the melted white chocolate, ensuring it is completely covered. Allow excess chocolate to drip off before placing back on the baking sheet.
While the coating is still wet, sprinkle crushed Oreos over the top of each truffle.
Return the baking sheet to the refrigerator for another 30 minutes, or until the white chocolate coating has fully set.
