Once rinsed, place the rice and water in a rice cooker, then cook according to the manufacturer’s instructions. After cooking, let the rice rest for 10 minutes, covered, to allow it to steam and become fluffy.
Season Rice: While the rice is resting, prepare the seasoning. In a small bowl, combine rice vinegar, sugar, and salt. Stir until the sugar and salt are fully dissolved. After the rice has cooled slightly, gently mix the seasoning into the rice, being careful not to mash the grains. Set the seasoned rice aside to cool further.
Make Spicy Salmon Mixture: In a large mixing bowl, combine the diced salmon with sriracha, mayonnaise, and soy sauce. Stir thoroughly to ensure every piece of salmon is well-coated with the spicy mixture, enhancing the flavor.
Layer the Bake: Preheat your oven to 375°F (190°C). Spread the seasoned sushi rice evenly across the bottom of a baking dish, creating a solid base. Then, evenly distribute the spicy salmon mixture over the rice, ensuring a uniform layer for even cooking.
Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes. The dish is ready when the salmon is cooked through and the top has developed a light golden color.
