Begin by preparing your ingredients: hull and slice the fresh strawberries, then squeeze your lemons to collect the juice.
In a blender, combine the sliced strawberries, freshly squeezed lemon juice, honey (or agave syrup), water, lemon zest, and a pinch of salt.
Blend on high speed until the mixture is completely smooth and all ingredients are fully incorporated. Taste the mixture and adjust the sweetness with more honey or agave if needed.
Carefully pour the strawberry lemonade mixture into popsicle molds, filling each mold until they are approximately three-quarters full to allow for expansion during freezing.
Place the popsicle sticks into the molds, making sure they are centered, and then transfer the molds to the freezer. Allow them to freeze for at least 6 hours or until completely solid.
When you're ready to enjoy your popsicles, gently run warm water over the outside of the molds for a few seconds. This will help release the popsicles more easily.
Pull the popsicles out of the molds with a gentle tug, and serve immediately. For an extra touch, garnish with fresh mint leaves for a pop of color and flavor.
